The farmers carefully tend to these plants, ensuring they receive just the right amount of sunlight and rain.
After approximately three to four years, these coffee plants start producing cherries. Yes, cherries! Your coffee begins its life as a fruit, and within these cherries are the precious coffee beans.
Harvest time is crucial. Coffee cherries don't all ripen at the same pace, so it's crucial to handpick only the ripe ones. This is a labor-intensive process, but essential to ensure the highest quality beans. Imagine the hands that patiently pluck these cherries, one by one. It's a labor of love, and it's what sets the foundation for your fantastic coffee experience.
Processing the Beans
Once harvested, the coffee cherries are depulped, a process that removes the outer skin and pulp, leaving behind the coffee bean. These beans then undergo fermentation, a natural process where sugars transform into acids, giving coffee its distinctive flavor profile. After fermentation, the beans are washed and dried.
The dried green coffee beans are now transported to our roasting facility in New York. Here, we use precise heat and time controls to transform these green beans into the brown, aromatic ones you're familiar with. Roasting is an art in itself, as different temperatures and roast durations create a variety of flavor profiles. Light roast, medium roast, dark roast - each has its unique flavor nuances!
Grinding and Brewing
Next, the roasted beans are ground. The grind size plays a key role in determining the taste of your coffee, as it influences the extraction process. Too fine a grind can result in over-extraction and a bitter taste, while too coarse a grind can lead to under-extraction and a weak flavor.
